A healthier, make-ahead meal prep featuring lean ground beef tossed in a sweet-spicy gochujang sauce, perfect for satisfying Korean BBQ cravings.
Ingredients
- 1 lb lean ground beef
- 2 tbsp gochujang Korean chili paste
- 2 tbsp soy sauce low sodium
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey or brown sugar
- 2 cloves garlic minced
- 1 tsp fresh ginger grated
- 4 cups cooked rice brown or white
- 2 cups steamed broccoli or other preferred vegetable
Instructions
- In a medium bowl, whisk together gochujang, soy sauce, sesame oil, rice vinegar, honey, minced garlic, and grated ginger until well combined. This is your gochujang sauce.
- Heat a large skillet or wok over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
- Pour the prepared gochujang sauce over the cooked ground beef. Stir well to coat the beef evenly and simmer for 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Divide the cooked gochujang beef and cooked rice evenly into four meal prep containers.
- Add steamed broccoli or your chosen vegetable to each container. Allow the meals to cool completely before covering and refrigerating for up to 4 days. Reheat in the microwave when ready to eat.
Notes
For an extra kick, add a pinch of red pepper flakes to the sauce. Serve with kimchi or a fried egg for added flavor. Store in airtight containers for up to 4 days in the refrigerator. Reheats well in the microwave.
