A classic Korean BBQ Marinade delivering a sweet, tangy, and umami punch to grilled meats, featuring soy sauce, brown sugar, and gochujang.
Ingredients
- 1/2 cup soy sauce
- 1/4 cup light brown sugar packed
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons sesame oil toasted
- 1 tablespoon rice vinegar
- 4 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 1/4 cup water
- 1/4 teaspoon black pepper
Instructions
- In a medium bowl, combine the soy sauce, brown sugar, gochujang, sesame oil, rice vinegar, minced garlic, grated ginger, water, and black pepper.
- Whisk vigorously until the brown sugar is fully dissolved and all ingredients are well combined.
- Taste the marinade and adjust seasonings if necessary, adding more gochujang for extra spice or brown sugar for more sweetness.
- Use immediately to marinate your desired protein, or transfer to an airtight container and store in the refrigerator until ready to use.
Notes
For best results, marinate meat for at least 30 minutes, or up to 24 hours in the refrigerator for deeper flavor. This marinade is excellent with beef short ribs (galbi), pork belly, chicken thighs, or even firm tofu. Adjust gochujang for desired spice level. Can be stored in an airtight container in the fridge for up to 5 days.
