Korean BBQ Chicken Skewers

Ingredients
- 1.5 lb boneless skinless chicken thighs or breast
- 1 cup Korean Gochujang BBQ Sauce divided
- 1 large bell pepper red or yellow
- 1 medium zucchini cut into half-moons or 1-inch pieces
- 1 small red onion cut into wedges
- 8 to 10 wooden or metal skewers
Instructions
- Marinate chicken in half the Korean Gochujang BBQ Sauce for 1 hour in a non-reactive bowl or resealable bag.
- Thread chicken, bell pepper, zucchini, and onion alternately onto skewers.
- Preheat grill to medium-high heat. Lightly oil the grill grates. Place skewers on the grill.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp. Brush remaining Gochujang BBQ sauce onto the skewers during the last few minutes of grilling.
- Remove from grill and serve hot.
Notes
For best results, marinate the chicken for at least 1 hour, or up to 4 hours for deeper flavor. If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning. Serve with a side of steamed rice, kimchi, or a fresh cucumber salad.
