Tender beef ribs marinated in a sweet and tangy pineapple mixture, then grilled to perfection for a unique tropical BBQ flavor. Perfect for a special dinner.
Ingredients
- 2 lb beef short ribs bone-in
- 1 cup fresh pineapple diced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tbsp ginger grated
- 2 cloves garlic minced
- 1 tbsp sesame oil
- 1 tsp black pepper
Instructions
- Combine diced pineapple, soy sauce, brown sugar, rice vinegar, grated ginger, minced garlic, sesame oil, and black pepper in a blender or food processor. Blend until smooth.
- Place beef short ribs in a large resealable bag or a shallow dish. Pour the pineapple marinade over the ribs, ensuring they are fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow flavors to meld.
- Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Remove the ribs from the marinade, discarding any excess marinade.
- Place the marinated beef ribs on the preheated grill. Grill for 10-15 minutes per side, turning occasionally, until the ribs are cooked to your desired doneness and have a beautiful char and caramelized crust. For more tender ribs, you can finish cooking them indirectly on the grill over lower heat, or in the oven after initial searing.
- Serve the pineapple marinated beef ribs hot, garnished with fresh cilantro or a sprinkle of sesame seeds if desired. Enjoy with your favorite side dishes.
Notes
For best flavor, marinate ribs overnight in the refrigerator. You can also bake these ribs in the oven at 300°F (150°C) for 2-2.5 hours until tender before finishing on a hot grill for a crispy, caramelized exterior.
