Ingredients
- 3 tbsp vegetable oil
- 2 cloves garlic minced
- 1 shallot finely sliced
- 2 bird's eye chilies sliced (optional)
- 1 cup cooked chicken or shrimp chopped
- 4 cups cold day-old cooked jasmine rice
- 2 tbsp kecap manis (sweet soy sauce)
- 1 tbsp soy sauce
- 1/2 tsp shrimp paste optional
- 2 large eggs fried for serving
- 1/4 cup crispy fried shallots for garnish
- fresh cucumber slices for garnish
Instructions
- Heat vegetable oil in a large wok or frying pan over medium-high heat.
- Add minced garlic, sliced shallot, and chilies (if using). Stir-fry until fragrant, about 1-2 minutes.
- Add chopped chicken or shrimp and cook until heated through, about 2-3 minutes.
- Add the cold day-old rice to the wok. Break up any clumps with your spatula.
- Pour in the kecap manis, soy sauce, and shrimp paste (if using). Stir well to combine, ensuring the rice is evenly coated and heated through. Cook for 5-7 minutes, stirring occasionally, until the rice is slightly toasted.
- Taste and adjust seasoning if necessary.
- Divide the nasi goreng into serving plates. Top each portion with a fried egg and garnish with crispy fried shallots and cucumber slices. Serve immediately.
Notes
For best results, use day-old cooked rice, as it's drier and less likely to become mushy. Adjust chili to your spice preference. Serve with a fried egg, cucumber slices, and tomato for a complete meal.
