Ingredients
- 1 medium onion grated or finely pureed
- 0.5 cup plain Greek yogurt full-fat recommended
- 2 tablespoons lemon juice freshly squeezed
- 1 teaspoon paprika sweet or smoked
- 0.5 teaspoon turmeric ground
- 0.25 teaspoon black pepper freshly ground
- 1 teaspoon salt or to taste
- 1.5 lbs boneless skinless chicken thighs or breast
- 2 tablespoons olive oil for grilling
Instructions
- In a large bowl, combine the grated or pureed onion, Greek yogurt, lemon juice, paprika, turmeric, black pepper, and salt. Mix well until a smooth marinade forms.
- Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the chicken to tenderize.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.
- Preheat your grill to medium-high heat (or preheat oven to 400°F/200°C for baking, or a pan over medium-high heat). Lightly brush the chicken skewers with olive oil.
- Grill the chicken skewers for 3-4 minutes per side, turning frequently, until cooked through and slightly charred. (For baking, bake for 15-20 minutes, flipping halfway. For pan-frying, cook in batches until golden and cooked through).
- Remove from heat and let rest for a few minutes. Garnish with fresh parsley or mint and serve immediately with rice or a fresh salad.
Notes
For best results, marinate chicken for at least 4 hours, or overnight. If using wooden skewers, soak them in water for 30 minutes prior to use. Serve with saffron rice, grilled tomatoes, and fresh herbs.
