Ingredients
  

  • 4 thighs bone-in skin-on chicken thighs
  • 2 cloves garlic minced
  • 1 tsp garam masala
  • 2 tbsp soy sauce low-sodium
  • 1 tbsp lime juice freshly squeezed
  • 0.5 tsp white pepper
  • 0.5 tsp black pepper freshly ground
  • 3 tbsp gochujang Korean chili paste
  • 2 tbsp honey
  • 1 tbsp water
  • 1 tsp sesame oil optional
  • green onions sliced
  • sesame seeds for garnish (optional)

Instructions
 

  • In a large bowl, combine chicken thighs with minced garlic, garam masala, soy sauce, lime juice, white pepper, and black pepper. Toss to coat evenly. Marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.
  • Preheat your air fryer to 400°F (200°C). Arrange the chicken thighs in a single layer in the air fryer basket, ensuring they are not overcrowded. Cook in batches if necessary.
  • Air fry for 10-12 minutes, then flip the chicken thighs. Continue to cook for another 8-10 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
  • While the chicken is cooking, prepare the hot honey gochujang sauce. In a small saucepan, whisk together gochujang, honey, water, and sesame oil (if using) over medium-low heat until well combined and slightly thickened. Taste and adjust sweetness or spice as desired.
  • Once the chicken is cooked, transfer it to a clean bowl. Pour the hot honey gochujang sauce over the chicken and toss gently to coat each piece thoroughly.
  • Serve immediately, garnished with sliced green onions and sesame seeds if desired.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce. If you don't have an air fryer, you can bake the chicken at 400°F (200°C) for 25-30 minutes, flipping halfway. Ensure chicken reaches an internal temperature of 165°F (74°C). Serve with rice and a refreshing cucumber salad.
