Ingredients

  • 2 pounds chicken wings separated at the joint
  • 1 tablespoon baking powder optional
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup unsalted butter melted
  • 0.5 cup honey
  • 0.25 cup hot sauce like Frank's RedHot
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon light brown sugar

Instructions

  • 1. **Prep the Wings:** Pat chicken wings thoroughly dry with paper towels. In a large bowl, toss wings with baking powder (if using), garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
  • 2. **Bake the Wings:** Preheat oven to 400°F (200°C). Arrange wings in a single layer on a wire rack set over a baking sheet lined with foil (for easier cleanup). Bake for 30-35 minutes, flipping halfway through, until golden brown and crispy. Internal temperature should reach 165°F (74°C).
  • 3. **Make the Hot Honey Fire Sauce:** While wings are baking, combine melted butter, honey, hot sauce, cayenne pepper, apple cider vinegar, and brown sugar in a small saucepan over medium heat. Bring to a gentle simmer, whisking occasionally, until the sauce is smooth and slightly thickened.
  • 4. **Toss and Serve:** Once wings are cooked, transfer them to a large bowl. Pour the hot honey fire sauce over the wings and toss gently until every wing is thoroughly coated.
  • 5. **Garnish & Enjoy:** Garnish with sesame seeds or chopped chives if desired. Serve immediately with your favorite cooling dip.

Notes

For extra crispiness, pat chicken wings very dry with paper towels before seasoning. Adjust cayenne pepper and hot sauce to control the level of heat according to your preference. For an even crispier result, you can air fry the wings at 375°F (190°C) for 20-25 minutes, shaking the basket halfway through. Serve with a cooling blue cheese or ranch dip.
