Honey Gochujang Glazed Chicken

Ingredients
- 1.5 lb boneless skinless chicken thighs or breasts
- 0.5 cup gochujang (Korean chili paste)
- 0.25 cup honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cloves garlic minced
- 1 tsp fresh ginger grated
- 1 tbsp vegetable oil
- 2 tbsp green onion sliced
- 1 tsp sesame seeds
- 2 tbsp crushed peanuts
Instructions
- Pat chicken pieces dry and season lightly with salt and pepper.
- In a medium bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. This is your Honey Gochujang Glaze.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned on all sides and mostly cooked through, about 5-7 minutes.
- Reduce heat to medium-low. Pour the Honey Gochujang Glaze over the chicken. Stir well to coat all the chicken pieces.
- Simmer for 3-5 minutes, stirring occasionally, until the glaze thickens and beautifully coats the chicken. Be careful not to burn the glaze.
- Remove from heat. Garnish generously with sliced green onion, sesame seeds, and crushed peanuts. Serve immediately with steamed rice, kimchi, or a refreshing cucumber salad.
