Ingredients
  

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon vegetable oil for cooking
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons green onions sliced

Instructions
 

  • In a medium bowl, whisk together gochujang, honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger to create the sauce.
  • Add the chicken pieces to the bowl with the sauce and toss to coat evenly. Marinate for at least 15 minutes, or up to 30 minutes for deeper flavor.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken, reserving any excess sauce in the bowl.
  • Cook the chicken for 8-10 minutes, flipping occasionally, until browned and cooked through.
  • Pour the reserved sauce over the chicken and cook for another 2-3 minutes, stirring constantly, until the sauce thickens and beautifully coats the chicken pieces in a glossy glaze.
  • Remove from heat. Garnish with sesame seeds and sliced green onions. Serve immediately with steamed rice.

Notes

For extra heat, add a pinch of red pepper flakes to the sauce. Serve with steamed rice and a side of quick-pickled cucumbers or a simple green salad for a complete meal. Chicken breasts can be used, but adjust cooking time.
