  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 1 tsp fresh sage chopped (or 1/2 tsp dried)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • Wash, peel (if necessary), deseed, and slice the squash into 1-inch cubes or half-moon shapes. Ensure pieces are uniform for even cooking.
  • In a small bowl, whisk together the melted butter, honey, salt, and black pepper until well combined.
  • Place the squash pieces on the prepared baking sheet. Pour the butter-honey mixture over the squash and toss gently to ensure all pieces are evenly coated.
  • Sprinkle the chopped fresh sage over the squash, distributing it evenly.
  • Roast for 25-30 minutes, flipping the squash halfway through, until it is tender and lightly caramelized. Cooking time may vary based on squash type and thickness.

Notes

Use any winter squash like butternut, acorn, or delicata. For delicata squash, peeling is optional. Adjust honey and seasoning to taste. For extra crispiness, roast for a few more minutes or broil briefly at the end.
