  • 2 lb boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 12 count wooden skewers soaked in water for 30 minutes if using

  • In a large bowl, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, salt, pepper, and red pepper flakes (if using).
  • Add the chicken cubes to the marinade, tossing to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
  • Preheat your grill to medium-high heat (about 400°F / 200°C). Lightly oil the grill grates.
  • Thread the marinated chicken cubes onto the soaked wooden or metal skewers, ensuring not to overcrowd them.
  • Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and lightly charred. An internal temperature of 165°F (74°C) should be reached.
  • Remove from the grill and let rest for a few minutes before serving.

For best results, marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
