Ingredients
  

  • 1.5 pound boneless skinless chicken thighs
  • 0.25 cup olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt
  • 10 each wooden or metal skewers

Instructions
 

  • In a medium bowl, whisk together olive oil, lemon juice, soy sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  • Add chicken pieces to the marinade, toss to coat, and refrigerate for at least 30 minutes, or up to 4 hours.
  • If using wooden skewers, soak them in water for 30 minutes.
  • Preheat grill to medium-high heat.
  • Thread chicken pieces onto skewers.
  • Grill skewers for 3-4 minutes per side, or until chicken is cooked through and lightly charred, about 12-15 minutes total.
  • Remove from grill and let rest for a few minutes before serving.

Notes

For best flavor, marinate chicken for at least 30 minutes, or up to 4 hours. If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. Serve with rice, salad, or grilled vegetables. You can add bell peppers and onions to the skewers for extra flavor and color.
