Ingredients
- 1 lb boneless skinless chicken thighs
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tsp turmeric powder
- 1 tsp curry powder
- 0.5 tsp cumin powder
- 1 clove garlic minced
- 1 tbsp lime juice
- 2 tbsp vegetable oil
- 12 count wooden skewers soaked
- 0.5 cup creamy peanut butter
- 0.25 cup coconut milk
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 1 tsp sriracha or to taste
- 0.25 cup warm water or more
Instructions
- 1. Prepare the Chicken: In a bowl, combine chicken pieces with soy sauce, fish sauce, brown sugar, turmeric, curry powder, cumin, minced garlic, lime juice, and vegetable oil. Mix well to coat all chicken pieces. Cover and marinate in the refrigerator for at least 2 hours, or preferably overnight.
- 2. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked wooden skewers, about 3-4 pieces per skewer, leaving a small space between each piece for even cooking.
- 3. Grill the Satay: Preheat your grill to medium heat. Lightly oil the grill grates. Place the chicken skewers on the hot grill. Grill for 3-4 minutes per side, turning occasionally, until the chicken is cooked through, no longer pink, and has nice char marks.
- 4. Make the Peanut Sauce: While the chicken is grilling, prepare the peanut sauce. In a small saucepan or microwave-safe bowl, combine the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha (if using).
- 5. Heat and Thin Sauce: Heat the sauce over low heat on the stovetop or in the microwave for 30-60 seconds, stirring until smooth and warmed through. Gradually add warm water, one tablespoon at a time, until the sauce reaches your desired consistency.
- 6. Serve: Arrange the grilled chicken satay on a platter and serve immediately with the warm peanut sauce for dipping. Garnish with chopped peanuts or cilantro if desired.
Notes
For best flavor, marinate chicken for at least 2 hours or overnight. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Adjust spice level in the peanut sauce to your preference. Serve with steamed rice, sliced cucumbers, and red onion.
