Greenwich Spicy Sauce
A vibrant and fiery homemade sauce, perfect for adding a zesty, spicy kick to a wide array of dishes. Its fresh ingredients create a bold flavor profile.
Ingredients
- 1 cup red chili peppers stems removed (e.g.
- 4 cloves garlic peeled
- 1 inch ginger peeled and sliced
- 0.5 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 teaspoon salt
- 0.25 cup water
Instructions
- Roughly chop the red chili peppers, garlic, and ginger.
- Combine all ingredients (chili peppers, garlic, ginger, rice vinegar, soy sauce, sugar, salt, water) in a blender or food processor.
- Blend until smooth. For a chunkier sauce, blend less. For a very smooth sauce, blend longer and consider straining if desired.
- Pour the sauce into a small saucepan. Bring to a gentle simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, stirring occasionally, until the sauce thickens slightly.
- Remove from heat and let cool completely before transferring to an airtight jar or bottle. Store in the refrigerator.
Notes
For a milder sauce, deseed some or all of the chili peppers. Adjust salt and sugar to taste. This sauce can be stored in an airtight container in the refrigerator for up to two weeks. It's excellent with grilled meats, rice, eggs, or as a dipping sauce.
