Ingredients
- 1.5 lb boneless skinless chicken breast or thigh
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk well to create the marinade.
- Add the chicken cubes to the bowl and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat (about 400-450°F / 200-230°C).
- Thread the marinated chicken pieces onto the skewers, ensuring not to overcrowd them.
- Grill the skewers for 10-14 minutes, turning occasionally, until the chicken is cooked through and has a nice char on all sides. The internal temperature should reach 165°F (74°C).
- Remove from the grill and let rest for a few minutes before serving.

Serve with warm pita bread, a dollop of creamy tzatziki, and a fresh Greek salad for a complete meal. For extra flavor, you can marinate the chicken overnight. Ensure your grill is hot to get a nice char.
