Ingredients
- 1.5 lb boneless skinless chicken thighs or breast
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 0.5 tsp paprika
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 tbsp lemon juice
- 1 head romaine lettuce chopped
- 1 cup cherry tomatoes halved
- 0.5 cup cucumber diced
- 0.25 cup red onion thinly sliced
- 0.5 cup Kalamata olives pitted
- 0.25 cup feta cheese crumbled
- 3 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 0.5 tsp dried oregano
- 0.25 tsp salt
- 0.25 tsp black pepper
- 8 oz feta cheese crumbled
- 4 oz cream cheese softened
- 2 tbsp olive oil
- 1 tbsp milk or water
- 0.5 clove garlic minced (optional)
- 0.25 tsp dried oregano
Instructions
- For Chicken Souvlaki: 1. In a bowl, combine chicken cubes with 2 tbsp olive oil, minced garlic, 1 tsp oregano, paprika, 0.25 tsp salt, 0.25 tsp black pepper, and lemon juice. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- 2. Preheat grill to medium-high heat. Thread marinated chicken onto skewers.
- 3. Grill chicken skewers for 3-4 minutes per side, or until cooked through and lightly charred. For Greek Salad: 1. In a large bowl, combine chopped romaine, cherry tomatoes, diced cucumber, red onion, and Kalamata olives.
- 2. In a small bowl, whisk together 3 tbsp extra virgin olive oil, red wine vinegar, 0.5 tsp oregano, 0.25 tsp salt, and 0.25 tsp black pepper.
- 3. Pour dressing over salad ingredients and toss gently. Top with crumbled feta cheese. For Whipped Feta Dip: 1. In a food processor, combine 8 oz crumbled feta cheese, softened cream cheese, 2 tbsp olive oil, milk/water, minced garlic (if using), and 0.25 tsp oregano.
- 2. Process until smooth and creamy, scraping down the sides as needed. Adjust consistency with more milk/water if desired. To Serve: 1. Arrange grilled chicken souvlaki, Greek salad, and whipped feta dip on a platter. 2. Serve immediately, optionally with warm pita bread or rice.
Notes
For best flavor, marinate the chicken for at least 2 hours or overnight. If you don't have a grill, you can cook the souvlaki in a hot pan or under a broiler. Serve with warm pita bread and a sprinkle of fresh parsley.
