Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar
  • 1 clove garlic minced
  • 0.5 tsp ginger grated
  • 1 tbsp sesame oil
  • 2 tbsp water
  • 1 tbsp cooking oil for skillet
  • 2 stalks green onions sliced
  • 2 cups cooked white rice for serving

Instructions

  • Pat chicken dry with paper towels and season lightly with salt and pepper.
  • In a small bowl, whisk together gochujang, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and water until the sauce is smooth.
  • Heat a large skillet or wok over medium-high heat. Add cooking oil. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  • Pour the prepared gochujang sauce over the cooked chicken. Toss to coat evenly and continue to cook for 2-3 minutes, allowing the sauce to thicken and create a glossy glaze on the chicken.
  • Remove from heat and serve immediately over hot white rice, garnished generously with sliced green onions.

Notes

Serve immediately over white rice with plenty of fresh green onions. This versatile gochujang sauce also works wonderfully with stir-fried vegetables like bell peppers and broccoli, or even firm tofu for a vegetarian option.
