Ingredients
- 1 lb boneless skinless chicken thighs
- 1 tbsp olive oil extra virgin
- 1 tsp chili powder
- 0.5 tsp cumin
- 0.25 tsp garlic powder
- 0.25 tsp onion powder
- 0.25 tsp smoked paprika
- pinch salt and black pepper
- 12 small corn tortillas
- 0.5 cup red onion finely diced
- 0.25 cup cilantro chopped
- 2 tbsp salsa verde or your favorite
Instructions
- Slice chicken thighs into bite-sized pieces. In a bowl, toss chicken with olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Heat a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes, stirring occasionally, until chicken is cooked through and slightly caramelized.
- While chicken cooks, warm the corn tortillas. You can do this by heating them directly over a gas burner for a few seconds per side, or by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or heating them in a dry skillet.
- Assemble your tacos: Place a generous spoonful of chicken onto each warm tortilla. Top with finely diced red onion, chopped cilantro, and a drizzle of salsa verde. Serve immediately and enjoy your homemade street food experience!
