A versatile recipe for marinated meat skewers, echoing the spirit of popular Asian BBQ styles like Satay and Char Siu, perfect for grilling.
Ingredients
- 1 pound boneless chicken or pork cut into 1-inch cubes
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 2 cloves garlic minced
- 1 teaspoon fresh ginger grated
- 0.5 teaspoon white pepper
- 8 units wooden skewers soaked
Instructions
- In a bowl, combine soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, grated ginger, and white pepper. Whisk until well combined.
- Add the cubed meat to the marinade, ensuring it's fully coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow flavors to meld.
- Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). If using wooden skewers, ensure they have been soaked in water for at least 30 minutes to prevent burning.
- Thread the marinated meat onto the prepared skewers. Do not overcrowd the skewers, leaving a little space between pieces for even cooking.
- Grill the skewers for 10-15 minutes, turning them occasionally, until the meat is cooked through, tender, and has appealing char marks on all sides. Cooking time may vary based on meat type and thickness.
- Serve hot, optionally garnished with fresh cilantro or scallions, and accompanied by a side of steamed rice or a fresh cucumber salad.
Notes
Use chicken, beef, or pork. For a Chinese Char Siu twist, add 1 tbsp hoisin sauce and a pinch of red food coloring to the marinade. For a more authentic Satay, add 1 tbsp ground coriander and cumin, and serve with peanut sauce. Soak wooden skewers for 30 minutes before use to prevent burning.
