Ingredients
  

  • 1.5 cup all-purpose flour sifted
  • 2 tablespoon granulated sugar
  • 2 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1.25 cup milk
  • 1 large egg
  • 2 tablespoon melted butter or vegetable oil

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate medium bowl, whisk together the milk, egg, and melted butter or oil until well combined.
  • Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
  • Heat a lightly oiled griddle or non-stick pan over medium heat. Pour about 1/4 cup of batter for each pancake onto the hot surface.
  • Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface. Flip and cook for another 1-2 minutes until cooked through.
  • Serve warm with your desired toppings.

Notes

For thicker, fluffier pancakes, use slightly less milk. For thinner, crêpe-like pancakes, add a tablespoon or two more milk until the desired consistency is reached. Serve with fresh fruit, maple syrup, jam, whipped cream, or powdered sugar. This recipe yields about 8-10 pancakes.
