Ingredients
  

  • 1.5 lb boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 cup fresh lemon juice
  • 1/4 cup plain yogurt

Instructions
 

  • In a large bowl, combine olive oil, minced garlic, paprika, cumin, coriander, cayenne pepper (if using), lemon juice, yogurt, salt, and pepper. Mix well.
  • Add the chicken cubes to the marinade, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow flavors to meld.
  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto skewers, being careful not to overcrowd them.
  • Grill the kebabs for 3-4 minutes per side, or until the chicken is cooked through and lightly charred. The internal temperature should reach 165°F (74°C).
  • Remove from grill and let rest for a few minutes before serving.

Notes

For best flavor, marinate chicken for at least 2 hours, or overnight. Serve with rice, pita bread, or a fresh salad. You can also add bell peppers and onions to the skewers for extra flavor and color.
