- 1 large bell pepper any color
- 0.5 medium red onion cut into 1-inch pieces
- 1 cup cherry tomatoes
Instructions
- Cut chicken breasts into uniform 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium bowl, whisk together the olive oil, lemon juice, dried oregano, minced garlic, salt, and black pepper.
- Add the chicken cubes to the marinade, tossing to ensure all pieces are well coated. Let it marinate for at least 15 minutes at room temperature, or cover and refrigerate for up to 2 hours for deeper flavor.
- Thread the marinated chicken, bell pepper pieces, red onion pieces, and cherry tomatoes alternately onto the soaked skewers.
- Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
