Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken thighs
- 1 medium onion diced
- 2 cloves garlic minced
- 1 cup long-grain white rice rinsed
- 2 cups chicken broth
- 1 teaspoon paprika
- 0.5 teaspoon cumin
- 0.25 teaspoon black pepper
- 0.5 teaspoon salt
- 0.5 cup frozen peas optional
- 2 tablespoons fresh cilantro chopped
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pan and set aside.
- Add diced onion to the pan and cook until softened, about 5 minutes.
- Stir in minced garlic, paprika, cumin, salt, and pepper, and cook for 1 minute until fragrant.
- Add the rinsed rice to the pan and stir to coat it with the spices and onion, cooking for 2-3 minutes.
- Pour in the chicken broth and bring to a simmer. Return the chicken to the pan.
- Reduce heat to low, cover, and cook for 18-20 minutes, or until rice is tender and most of the liquid has been absorbed.
- Stir in frozen peas (if using) and cover for another 5 minutes to heat through.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
Notes
Experiment with different spices like smoked paprika for a Spanish flair or turmeric and cumin for an Indian twist. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For extra flavor, use homemade chicken broth.
