Ingredients
- 1 tablespoon olive oil
- 1 cup chopped carrots
- 1 cup chopped celery
- 0.5 cup diced potato peeled
- 4 cups low-sodium chicken broth
- 2 cups cooked chicken breast shredded or diced
- 0.5 teaspoon dried thyme
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped carrots, celery, and diced potato to the pot. Sauté for 5-7 minutes until vegetables begin to soften.
- Pour in the low-sodium chicken broth. Add dried thyme, salt, and black pepper. Bring the soup to a gentle boil, then reduce heat to low, cover, and simmer for 20 minutes, or until vegetables are tender.
- Stir in the cooked chicken breast and continue to simmer for another 5-10 minutes to heat through.
- Taste and adjust seasonings as needed. Serve warm and enjoy this comforting, gut-friendly soup.
Notes
For an even smoother consistency, you can blend a portion of the soup before serving. Always use low-sodium, high-quality chicken broth to control salt intake. Feel free to add other mild, cooked vegetables like peeled zucchini or spinach during the last 10 minutes of cooking. Avoid adding spicy herbs or acidic ingredients like tomatoes.
