A simple, Brazilian-inspired base for cooking that highlights the use of dendê oil and fresh garlic, perfect for stews, rice, or vegetable sautés.
Ingredients
- 3 tbsp Azeite de dendê or substitute with olive/vegetable oil
- 4 cloves Fresh garlic minced
- 1/2 tsp Salt to taste
- 1/4 tsp Black pepper freshly ground
Instructions
- Heat the Azeite de dendê (palm oil) in a medium skillet or pot over medium heat until shimmering.
- Add the minced fresh garlic cloves to the hot oil. Sauté for 2 to 3 minutes, stirring constantly, until the garlic is fragrant and translucent, but do not let it brown.
- Season with salt and freshly ground black pepper, stirring to combine.
- Remove from heat and use immediately as a flavor base for your desired dish, such as a stew, rice, or vegetable sauté. Alternatively, let it cool and store in an airtight container in the refrigerator for up to 3 days.
Notes
For a milder flavor, use less dendê oil or combine it with olive or vegetable oil. This base is excellent for starting a moqueca, enriching rice, or sautéing shrimp and vegetables. Adjust salt and pepper to your preference.
