Ingredients
- 500 g medium ground pork
- 30 g shallot chopped
- 30 g garlic minced
- 30 g palm sugar crushed
- 30 g fish sauce
- 10 g oyster sauce
Instructions
- In a large bowl, combine the medium ground pork, chopped shallot, minced garlic, crushed palm sugar, fish sauce, and oyster sauce.
- Using your hands, gently mix all ingredients until just combined. Be careful not to overmix, as this can make the patties tough.
- Divide the mixture into approximately 6-8 equal portions and shape them into flat, round patties, about 1/2-inch thick.
- Heat a large skillet over medium heat. Add a tablespoon of oil if the pork is very lean.
- Cook the patties for 4-6 minutes per side, or until golden brown and cooked through (internal temperature reaches 160°F or 71°C).
- Serve immediately with your desired accompaniments.
Notes
For a spicier kick, add a pinch of chili flakes or finely minced fresh chili to the mixture. Serve with steamed jasmine rice, a fresh cucumber salad, or in lettuce wraps for a lighter option. These patties can also be baked at 375°F (190°C) for 15-20 minutes until cooked through.
