Ingredients
  

  • 4 cups first-fermented water kefir strained
  • 0.5 cup fruit (e.g. berries
  • 1 tablespoon fresh ginger grated (optional)
  • 0.25 cup fruit juice (e.g. grape

Instructions
 

  • Gently strain your first-fermented water kefir, reserving the grains for your next batch.
  • Prepare your flavorings: wash and chop fruit, grate ginger, or measure juice.
  • Combine the strained water kefir and your chosen flavorings in clean, airtight bottles, leaving at least 1-2 inches of headspace.
  • Seal the bottles tightly and let them ferment at room temperature (68-75°F / 20-24°C) for 1-3 days.
  • Check for carbonation daily by gently opening a bottle to release pressure (burping). When desired fizz is achieved, move bottles to the refrigerator to slow down fermentation and chill.
  • Serve your fizzy, flavored water kefir soda chilled and enjoy!

Notes

For best results, use airtight bottles designed for carbonated beverages. Fermentation time (cook time) can vary based on ambient temperature and sugar content of added ingredients; start checking for fizz after 24 hours. Burp bottles daily by gently opening them to release excess pressure and prevent explosions. Common flavor additions include berries, citrus slices, ginger, mint, or various fruit juices.
