Ingredients
  

  • 2 lbs pork shoulder cut into 2-inch cubes
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 head garlic minced
  • 1 teaspoon black peppercorns crushed
  • 2-3 bay leaves
  • 1/2 cup water or broth
  • 1 tablespoon cooking oil

Instructions
 

  • Heat cooking oil in a large pot or Dutch oven over medium heat. Add pork shoulder cubes and brown on all sides.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Pour in soy sauce, vinegar, water or broth, crushed black peppercorns, and bay leaves.
  • Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until pork is tender.
  • Remove the lid during the last 10-15 minutes of cooking to allow the sauce to reduce and thicken slightly.
  • Taste and adjust seasoning if needed. Serve hot with steamed white rice.

Notes

For a richer sauce, you can pan-fry the pork cubes until lightly browned before adding the liquid ingredients. Adjust the ratio of soy sauce to vinegar to suit your preference for saltiness and sourness. Serve with steamed white rice to soak up the delicious sauce.
