Ingredients

  • 3 medium ripe tomatoes cut into wedges
  • 1 medium cucumber peeled (optional) and sliced
  • 1/2 medium red onion thinly sliced
  • 1/2 cup Kalamata olives pitted
  • 4 ounces feta cheese block
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano

Instructions

  • In a large bowl, combine the tomato wedges, cucumber slices, red onion slices, and Kalamata olives.
  • Place the block of feta cheese on top of the vegetables or crumble it over them.
  • Drizzle generously with extra virgin olive oil.
  • Sprinkle with dried oregano, salt, and black pepper to taste.
  • Serve immediately as a side dish or light meal, perhaps with crusty bread for dipping in the delicious dressing.

Notes

For the best flavor, use ripe, in-season tomatoes and good quality extra virgin olive oil. Don't dice the vegetables too finely; a rustic chop is traditional. Serve immediately for optimal freshness. Add a touch of red wine vinegar if desired, though traditional Greek salads often omit it.
