Ingredients
  

  • 1 lb shelf-stable potato gnocchi
  • 1 lb bulk Italian sausage
  • 1 head fresh broccoli
  • 2 tbsp olive oil extra virgin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  • In a large bowl, combine the gnocchi, crumbled Italian sausage, and broccoli florets.
  • Drizzle with olive oil, then sprinkle with garlic powder, onion powder, red pepper flakes (if using), salt, and black pepper. Toss gently to ensure everything is evenly coated.
  • Spread the mixture in a single layer on the prepared sheet pan. Ensure there isn't too much overlap for best crisping.
  • Roast for 20-25 minutes, stirring halfway through, until the gnocchi is golden and crispy, the sausage is cooked through, and the broccoli is tender-crisp.
  • Remove from oven. Serve immediately, garnished with grated Parmesan cheese and fresh parsley.

Notes

Feel free to use chicken sausage or a vegetarian sausage for a lighter option. Add cherry tomatoes or sliced bell peppers for extra vegetables and color. A sprinkle of red pepper flakes adds a nice kick if you enjoy a little heat. Ensure ingredients are spread in a single layer for best crisping.
