  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 lemon zested and juiced
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes halved

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the chicken pieces with olive oil, dried oregano, garlic powder, paprika, salt, and black pepper. Toss well to ensure the chicken is evenly coated.
  • Add the lemon zest and fresh lemon juice to the chicken mixture, mixing again to incorporate the flavors.
  • Spread the seasoned chicken in a single layer on the prepared baking sheet. Arrange the broccoli florets and halved cherry tomatoes around the chicken on the same sheet.
  • Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the vegetables are tender-crisp.
  • Remove from the oven and serve immediately. Garnish with fresh parsley if desired.

Notes

For extra flavor, marinate the chicken pieces with the lemon and herb mixture for 15-30 minutes in the refrigerator if time allows. You can substitute chicken breasts, but adjust cooking time as needed to ensure they are cooked through. Serve with a fresh green salad or a side of quinoa.
