Ingredients
  

  • 1 tbsp oil (e.g.
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots julienned or thinly sliced
  • 1 cup bell peppers sliced (any color)
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 2 large eggs
  • (Optional) 1 tbsp soy sauce
  • (Optional) 1 tsp sesame oil

Instructions
 

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add chopped onion and cook for 2 minutes until slightly softened.
  • Add minced garlic, julienned carrots, and sliced bell peppers. Stir-fry for 3-4 minutes.
  • Add snap peas and broccoli florets. Continue to stir-fry for another 2-3 minutes until vegetables are tender-crisp.
  • Push vegetables to one side of the skillet. Crack two eggs into the empty side. Scramble lightly until just set.
  • Combine eggs with the stir-fried vegetables. Season with salt and pepper to taste, and optionally add soy sauce and sesame oil.
  • Serve hot.

Notes

Serve immediately with rice or noodles for a complete meal. Adjust vegetables based on what you have on hand, such as mushrooms, zucchini, or cabbage. A splash of soy sauce or a dash of sesame oil can enhance the flavor. For added protein, you can include cooked chicken or shrimp.
