A quick and healthy stir-fry featuring crisp vegetables and eggs, perfect for a weeknight meal or a light lunch. This simple dish is full of flavor and nutrients.
Ingredients
- 1 tbsp oil (e.g.
- 1/2 cup onion chopped
- 2 cloves garlic minced
- 1 cup carrots julienned or thinly sliced
- 1 cup bell peppers sliced (any color)
- 1 cup snap peas
- 1 cup broccoli florets
- 2 large eggs
- (Optional) 1 tbsp soy sauce
- (Optional) 1 tsp sesame oil
Instructions
- Heat oil in a large skillet or wok over medium-high heat.
- Add chopped onion and cook for 2 minutes until slightly softened.
- Add minced garlic, julienned carrots, and sliced bell peppers. Stir-fry for 3-4 minutes.
- Add snap peas and broccoli florets. Continue to stir-fry for another 2-3 minutes until vegetables are tender-crisp.
- Push vegetables to one side of the skillet. Crack two eggs into the empty side. Scramble lightly until just set.
- Combine eggs with the stir-fried vegetables. Season with salt and pepper to taste, and optionally add soy sauce and sesame oil.
- Serve hot.
Notes
Serve immediately with rice or noodles for a complete meal. Adjust vegetables based on what you have on hand, such as mushrooms, zucchini, or cabbage. A splash of soy sauce or a dash of sesame oil can enhance the flavor. For added protein, you can include cooked chicken or shrimp.
