Ingredients
  

  • 1 pie crust (store-bought or homemade 9-inch)
  • 1 cup feta cheese crumbled
  • 0.5 cup mozzarella cheese shredded
  • 0.5 cup ricotta cheese whole milk
  • 1 large egg beaten
  • 0.25 tsp salt (or to taste)
  • 0.125 tsp black pepper freshly ground
  • 2 tbsp fresh parsley chopped
  • 2 tbsp milk (for creaminess)

Instructions
 

  • Preheat oven to 375°F (190°C). If using a store-bought crust, thaw if frozen. Press the pie crust into a 9-inch tart pan with a removable bottom, trimming any excess. Prick the bottom with a fork.
  • Make the Cheese Filling: In a medium bowl, combine the crumbled feta cheese, shredded mozzarella cheese, whole milk ricotta cheese, beaten egg, milk, salt, black pepper, and chopped fresh parsley. Mix until smooth and well combined.
  • Pour the cheese filling into the prepared pie crust, spreading evenly with a spatula.
  • Bake for 35-45 minutes, or until the crust is golden brown and the filling is set and lightly golden on top. If the crust edges brown too quickly, you can cover them with aluminum foil.
  • Remove from oven and let cool for 10-15 minutes before carefully removing from the tart pan. Slice and serve warm or at room temperature. Garnish with extra fresh parsley if desired.

Serve warm or at room temperature. Great with a fresh green salad. For extra flavor, consider adding a handful of chopped fresh spinach, sun-dried tomatoes, or caramelized onions to the cheese filling.
