Ingredients
  

  • 200 g instant or egg noodles cooked according to package instructions
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 0.5 inch fresh ginger grated (optional)
  • 0.25 cup soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp sugar
  • 1 tsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp water for slurry
  • 2 large eggs
  • 2 tbsp green onions sliced

Instructions
 

  • Cook noodles according to package instructions. Drain and set aside.
  • In a small bowl, whisk together soy sauce, oyster sauce (if using), sugar, and rice vinegar.
  • In another small bowl, mix cornstarch with water to create a slurry.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger (if using), and stir-fry for 30 seconds until fragrant.
  • Add the cooked noodles to the skillet. Pour in the sauce mixture and toss well to coat the noodles.
  • Pour in the cornstarch slurry, stirring constantly until the sauce thickens and becomes rich and silky, coating the noodles evenly.
  • While the noodles are cooking, fry two eggs in a separate pan to your desired doneness (sunny-side up recommended).
  • Divide the noodles between two plates. Top each serving with a fried egg and the remaining fresh green onion. Slurp away!

Notes

For added protein, consider tossing in some cooked chicken, shrimp, or tofu along with the noodles. Feel free to add your favorite stir-fry vegetables like bell peppers, carrots, or broccoli florets. Adjust spice level by adding a pinch of red pepper flakes or a drizzle of sriracha.
