Ingredients
  

  • 4 boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper optional
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp honey
  • 2 tsp garlic powder or 1 minced clove fresh garlic

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Pat chicken thighs dry with paper towels. In a baking tray, drizzle chicken with 1 tbsp olive oil, sprinkle with salt and black pepper. Mix well to coat.
  • Place chicken in the oven and roast for 15-20 minutes, or until partially cooked and lightly browned.
  • While chicken is roasting, in a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp honey, and 2 tsp garlic powder.
  • Remove chicken from oven. Pour the soy-honey mixture over the chicken, ensuring it's evenly coated.
  • Return to the oven and cook for another 5-10 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C) and the glaze is caramelized.
  • Serve hot and enjoy!

Notes

Serve with steamed rice and a side of green vegetables for a complete meal. You can add chopped broccoli florets or bell peppers to the tray with the chicken for a one-pan meal. Adjust honey and soy sauce to taste. A dash of sriracha can add a pleasant kick.
