Easy Soy-Honey Roasted Chicken
A delicious and simple weeknight dinner featuring tender chicken thighs roasted to perfection and glazed with a sweet and savory soy-honey sauce. This Asian-inspired dish is quick to prepare and packed with flavor, making it a family favorite.
Ingredients
- 4 boneless skinless chicken thighs
- 1 tbsp olive oil
- 0.5 tsp salt or to taste
- 0.25 tsp black pepper optional
- 2 tbsp soy sauce low sodium preferred
- 1 tbsp honey
- 2 tsp garlic powder or 1 minced clove fresh garlic
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry with paper towels. In a baking tray, drizzle chicken with 1 tbsp olive oil, sprinkle with salt and black pepper. Mix well to coat.
- Place chicken in the oven and roast for 15-20 minutes, or until partially cooked and lightly browned.
- While chicken is roasting, in a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp honey, and 2 tsp garlic powder.
- Remove chicken from oven. Pour the soy-honey mixture over the chicken, ensuring it's evenly coated.
- Return to the oven and cook for another 5-10 minutes, or until chicken is cooked through (internal temperature of 165°F/74°C) and the glaze is caramelized.
- Serve hot and enjoy!
Notes
Serve with steamed rice and a side of green vegetables for a complete meal. You can add chopped broccoli florets or bell peppers to the tray with the chicken for a one-pan meal. Adjust honey and soy sauce to taste. A dash of sriracha can add a pleasant kick.
