A simple, comforting slow cooker chicken dish perfect for busy weeknights, resulting in tender, flavorful meat with minimal effort.
Ingredients
- 1.5 lb boneless skinless chicken thighs or breasts
- 1 cup chicken broth
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tsp paprika
- 0.5 tsp dried thyme
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp cornflour
- 2 tbsp water
Instructions
- Pat chicken dry and season with salt, pepper, paprika, and thyme.
- Place chopped onion and minced garlic at the bottom of the slow cooker. Add chicken on top.
- Pour in the chicken broth.
- Cook on low for 5-6 hours or on high for 2.5-3 hours, until the chicken is very tender and easily shredded.
- Remove chicken from the slow cooker and shred it using two forks. Set aside.
- In a small bowl, whisk together cornflour with a splash of water to form a smooth slurry.
- Stir the cornflour slurry into the liquid remaining in the slow cooker. Cook on high for another 15-20 minutes, stirring occasionally, until the sauce has thickened.
- Return shredded chicken to the slow cooker and stir to coat in the thickened sauce.
- Serve warm.
Notes
Serve this tender chicken with mashed potatoes, rice, or a side of steamed vegetables. For extra flavor, consider adding a bay leaf or a sprig of fresh rosemary to the slow cooker. Leftovers make great sandwich fillings or additions to salads.
