Easy Sheet Pan Salmon Dinner
A delicious and healthy sheet pan salmon dinner, perfect for busy weeknights. This recipe bakes to perfection in one pan, ensuring both easy preparation and even easier cleanup, making it an ideal choice for a family meal.
Ingredients
- 2 lb salmon fillets skin-on or off
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tsp garlic powder
- 0.5 tsp paprika
- 1 lemon thinly sliced
- 1 lb asparagus trimmed
- 1 pint cherry tomatoes
- 0.5 cup red onion thinly sliced
- 2 tbsp fresh parsley chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Pat salmon fillets dry with paper towels. In a small bowl, combine olive oil, salt, pepper, garlic powder, and paprika. Rub the mixture evenly over both sides of the salmon.
- Arrange salmon fillets on one side of the prepared baking sheet. Place lemon slices on top of each fillet.
- In a separate bowl, toss asparagus, cherry tomatoes, and red onion with a drizzle of olive oil, salt, and pepper.
- Arrange the seasoned vegetables around the salmon on the baking sheet, ensuring a single layer for even cooking.
- Bake for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork, and vegetables are tender-crisp. Cooking time may vary depending on the thickness of the salmon.
- Remove from oven. Garnish with fresh chopped parsley if desired. Serve immediately.
Notes
Feel free to vary the vegetables based on what's in season. Broccoli florets, asparagus, bell peppers, or zucchini are great additions. For extra flavor, sprinkle fresh dill or parsley after baking. Ensure vegetables are cut into similar-sized pieces for even cooking. Serve with a squeeze of fresh lemon for brightness.
