Ingredients
- 4 ounce cod fillets fresh or frozen (thawed)
- 2 tablespoons unsalted butter softened
- 1 tablespoon fresh dill chopped
- 1 tablespoon fresh parsley chopped
- 1 clove garlic minced
- 1 teaspoon lemon zest
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 lemon thinly sliced
- 4 sheets aluminum foil 12x12 inches
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier handling, if desired.
- In a small bowl, combine the softened butter, chopped fresh dill, chopped fresh parsley, minced garlic, lemon zest, salt, and black pepper. Mix until well combined.
- Lay out four 12x12 inch sheets of aluminum foil. Place one cod fillet in the center of each foil sheet.
- Divide the herbed butter mixture evenly among the cod fillets, spreading it gently over the top of each fish. Place 1-2 lemon slices on top of the buttered cod.
- Bring the longer sides of the foil together over the fish and fold them down several times to create a tight seal. Then, fold in the shorter sides to completely seal each packet, ensuring no steam can escape.
- Place the sealed foil packets on the prepared baking sheet.
- Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of your fillets.
- Carefully open the foil packets (watch out for steam!) and serve immediately.
Notes
Feel free to add quick-cooking vegetables like cherry tomatoes, asparagus, or thinly sliced bell peppers directly into the foil packets alongside the cod. For a spicy kick, add a pinch of red pepper flakes to the herbed butter. Serve with a side of quinoa or a fresh green salad.
