Easy Sheet Pan Breakfast
A delightful one-pan breakfast featuring savory sausage, crispy potatoes, and perfectly cooked eggs, all baked together for minimal mess and maximum flavor.
Ingredients
- 1 pound breakfast sausage links or ground
- 2 medium potatoes diced into 1/2-inch cubes
- 1 medium onion diced (optional)
- 1 bell pepper any color diced (optional)
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 6 large eggs
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the diced potatoes, sausage (if using links, slice them into bite-sized pieces), diced onion, and bell pepper (if using). Drizzle with olive oil, sprinkle with salt, and black pepper, then toss to coat evenly.
- Spread the mixture in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes, stirring halfway through, until the potatoes are tender-crisp and the sausage is browned and cooked through.
- Remove the baking sheet from the oven. Carefully make 6 small indentations or wells in the mixture and crack one egg into each well.
- Return the baking sheet to the oven and bake for another 8-12 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
- Serve immediately and enjoy your delicious, easy sheet pan breakfast!
Notes
For crispier potatoes, ensure they are in a single layer and not overcrowded on the baking sheet. You can add other vegetables like diced bell peppers, spinach, or mushrooms. Adjust baking time for eggs based on desired yolk doneness (8 minutes for runny yolks, 12+ for firm). Serve with a sprinkle of fresh chives or a dash of hot sauce.
