Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef lean
- 1 medium onion diced
- 2 cloves garlic minced
- 1 can (14.5 oz) diced tomatoes undrained
- 1 can (8 oz) tomato sauce
- 3 cups beef broth
- 1 teaspoon Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 ounces elbow macaroni uncooked
- 1 cup shredded cheddar cheese
- 0.5 cup shredded mozzarella cheese
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add ground beef and onion. Cook, breaking up the beef, until browned and onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
- Stir in the uncooked elbow macaroni. Cover the pot and reduce heat to low. Cook for 10-12 minutes, stirring occasionally, or until pasta is tender and most of the liquid has been absorbed.
- Remove from heat and stir in cheddar and mozzarella cheeses until melted and creamy.
- Serve immediately and enjoy your delicious one-pot meal!
Notes
Feel free to swap ground beef for ground turkey or ground chicken. Add more vegetables like spinach or diced bell peppers for extra nutrients. Serve with a sprinkle of fresh parsley.
