A quick and flavorful one-pot meal featuring seasoned ground beef, tender pasta, and a savory tomato sauce, perfect for busy weeknights with minimal cleanup.
Ingredients
- 1 lb ground beef lean
- 1 small onion diced
- 3 cloves garlic minced
- 1 can diced tomatoes 14.5 oz
- 2.5 cups beef broth low-sodium
- 1.5 cups dried pasta (e.g.
- 1 tsp Italian seasoning
- 0.5 tsp salt or to taste
- 0.25 tsp black pepper or to taste
- 0.5 cup shredded cheddar cheese optional
Instructions
- Brown the ground beef in a large skillet or pot over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
- Add the diced onion to the skillet and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the diced tomatoes (undrained), beef broth, dried pasta, Italian seasoning, salt, and pepper. Stir everything to combine.
- Bring the mixture to a boil, then reduce the heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Remove from heat and let stand for a few minutes. If desired, stir in shredded cheddar cheese before serving or sprinkle on top of individual servings. Serve hot.
Notes
For added vegetables, stir in 1 cup of frozen peas, corn, or diced carrots during the last 5 minutes of simmering. You can also swap cheddar for mozzarella or Monterey Jack cheese. Any small-shaped pasta like rotini or penne will work in place of elbow macaroni.
