Ingredients
  

  • 2 cup graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup granulated sugar
  • 1 cup strong brewed coffee cooled
  • 2 tbsp coffee liqueur optional
  • 8 oz cream cheese softened
  • 1 cup mascarpone cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream cold
  • 2 tbsp unsweetened cocoa powder for dusting

Instructions
 

  • In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press mixture evenly into the bottom of a 9-inch springform pan. Refrigerate for 15 minutes.
  • In a small bowl, combine cooled coffee and coffee liqueur, if using.
  • In a large bowl, beat softened cream cheese and mascarpone until smooth. Add powdered sugar and vanilla extract, beating until well combined.
  • In a separate cold bowl, beat cold heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until no streaks remain.
  • Spoon half of the mascarpone filling over the chilled crust and spread evenly. Dip graham crackers (or ladyfingers) quickly into the coffee mixture, then arrange a single layer over the mascarpone filling.
  • Top with the remaining mascarpone filling, spreading smoothly. Cover the springform pan and refrigerate for at least 4 hours, or preferably overnight, until firm.
  • Before serving, carefully remove the cheesecake from the springform pan. Dust generously with unsweetened cocoa powder. Slice and enjoy.

Notes

For an authentic touch, use strong brewed espresso. You can substitute ladyfingers for graham crackers if preferred, adjusting the amount to fit your pan. Ensure all dairy ingredients are at room temperature for a smooth filling. Chill overnight for best results and easier slicing.
