Ingredients
  

  • 1.5 kg chicken thighs or drumsticks bone-in
  • 750 g baby potatoes or small potatoes halved
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp Dijon mustard
  • 2 clove garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • 1. Prepare Marinade: In a large bowl, whisk together the olive oil, soy sauce, honey (or maple syrup), Dijon mustard, minced garlic, dried oregano, paprika, salt, and black pepper until well combined.
  • 2. Marinate Chicken & Potatoes: Add the chicken pieces and halved potatoes to the bowl with the marinade. Toss thoroughly until all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or ideally 2-4 hours, to allow the flavors to meld. For best results, you can marinate overnight.
  • 3. Preheat Oven: Preheat your oven to 200°C (400°F).
  • 4. Arrange on Tray: Place the marinated chicken pieces and potatoes in a single layer on a large baking tray or roasting pan. Make sure not to overcrowd the tray, as this can steam the ingredients instead of roasting them. Ensure potatoes are not too large; cut them smaller if needed to ensure they cook through evenly with the chicken.
  • 5. Bake: Bake for 40-45 minutes, or until the chicken is cooked through (internal temperature reaches 74°C/165°F) and the potatoes are tender and golden brown. For even browning, you can flip the chicken and potatoes halfway through the cooking time.
  • 6. Serve: Remove the tray from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley or cilantro if desired.

Notes

For extra flavor and color, add chopped vegetables like bell peppers, zucchini, or cherry tomatoes to the tray during the last 20 minutes of cooking. Marinating the chicken and potatoes overnight will result in deeper, more intense flavors. Ensure potatoes are cut into similar sizes for even cooking. Serve with a fresh green salad or a dollop of Greek yogurt.
