Ingredients
  

  • 2 each white fish fillets such as cod or tilapia
  • 1 bunch asparagus trimmed
  • 1 tbsp olive oil
  • 1 each lemon half juiced
  • 1 tsp dried parsley or 2 tbsp fresh chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • cooking spray each cooking spray for parchment

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Tear off two large pieces of parchment paper (about 15x15 inches each). Fold each in half to create a crease.
  • On one side of the crease for each parchment paper, place a white fish fillet. Arrange half of the trimmed asparagus spears around each fish fillet.
  • Spritz fish and asparagus with cooking spray, then drizzle lightly with olive oil.
  • Sprinkle salt, black pepper, and dried parsley evenly over the fish and asparagus. Drizzle fresh lemon juice over each portion and place a few lemon slices on top of the fish.
  • Fold the other half of the parchment paper over the fish and vegetables. Starting from one end, create small, tight folds along the edges to seal the parchment into a packet. Ensure it's tightly sealed to trap steam.
  • Carefully place the sealed parchment packets on a baking sheet.
  • Bake for 12-15 minutes, or until the fish is flaky and cooked through and the asparagus is tender-crisp. Cooking time may vary slightly depending on the thickness of your fish.
  • Remove from oven, carefully open the packets (watch out for steam!), and serve immediately.

Notes

Try different herbs like dill or thyme. For a touch of heat, add a pinch of red pepper flakes. You can also include thin slices of bell pepper or cherry tomatoes alongside the asparagus for added color and flavor. Ensure parchment packets are sealed tightly to trap steam.
