Ingredients
  

  • 1.5 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp dried Italian herbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt or to taste
  • 1/4 tsp black pepper or to taste
  • 1 lemon half juiced half sliced
  • 2 cups chopped broccoli florets
  • 1 cup carrots sliced
  • 1 red onion chopped into wedges

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine chicken pieces, olive oil, Italian herbs, garlic powder, paprika, salt, and pepper. Squeeze half of the lemon juice over the chicken and toss to coat evenly.
  • Add broccoli, carrots, and red onion to the bowl with the chicken. Toss everything together until vegetables are lightly coated.
  • Spread the chicken and vegetables in a single layer on the prepared baking sheet. Arrange lemon slices among the ingredients.
  • Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
  • Serve immediately with your favorite grain or a side salad, if desired.

Notes

Feel free to swap out vegetables like sweet potatoes, bell peppers, or asparagus. For a spicier kick, add a pinch of red pepper flakes. This recipe is excellent for meal prepping; store leftovers in airtight containers for up to 3 days. Serve with a side of quinoa or brown rice for a more filling meal.
