Ingredients
- 2 lb boneless skinless chicken breasts
- 2 tbsp olive oil extra virgin
- 4 cloves garlic minced
- 1 tbsp fresh rosemary finely chopped
- 1 tbsp fresh thyme finely chopped
- 1/2 tsp salt
- 1/4 tsp black pepper freshly ground
- 1 tbsp fresh parsley chopped
Instructions
- Pat chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
- In a small bowl, combine the minced garlic, finely chopped fresh rosemary, and finely chopped fresh thyme. Mix well to create the herb rub.
- Heat extra virgin olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering. Add the seasoned chicken breasts to the hot skillet.
- Cook the chicken breasts for 5-7 minutes per side, or until they are golden brown on the exterior and cooked through to an internal temperature of 165°F (74°C).
- During the last 2 minutes of cooking, sprinkle the garlic-herb mixture evenly over the chicken, allowing the aromatics to become fragrant but taking care not to burn the garlic.
- Remove chicken from the skillet and let it rest on a cutting board for 5 minutes before slicing. Resting allows the juices to redistribute, ensuring tender and moist chicken.
- Garnish with fresh chopped parsley and serve immediately with your favorite sides.
