Ingredients
  

  • 200 g pre-cooked udon noodles
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 2 large eggs scrambled
  • 150 g chicken breast thinly sliced or cubed
  • 1 cup mixed vegetables such as sliced carrots
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce or hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • 1 green onion sliced for garnish

Instructions
 

  • 1. Cook udon noodles according to package directions, rinse with cold water, and drain well. Set aside.
  • 2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
  • 3. Add chicken (or chosen protein) to the wok and stir-fry until cooked through, about 3-5 minutes. If using tofu, add it to brown.
  • 4. Push the protein to one side of the wok. Pour scrambled eggs into the empty space and scramble until just set. Break into smaller pieces.
  • 5. Add the mixed vegetables to the wok and stir-fry for 2-3 minutes until tender-crisp.
  • 6. Add the drained udon noodles to the wok. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, and sugar. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2-3 minutes.
  • 7. Serve immediately, garnished with sliced green onions.

Notes

Feel free to customize with your favorite protein like chicken, shrimp, or tofu. For vegetables, bell peppers, snap peas, bok choy, or mushrooms are great additions. Add a pinch of chili flakes for a spicy kick. This dish is best served immediately.
