Ingredients
  

  • 4 count white fish fillets (e.g. halibut
  • 1 cup snow peas
  • 1 medium zucchini thinly sliced
  • 1 medium lemon thinly sliced
  • 2 tbsp soy sauce low sodium
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp olive oil
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a small bowl, whisk together the soy sauce, sesame oil, grated ginger, minced garlic, rice vinegar, honey, olive oil, salt, and black pepper to create the sauce.
  • Tear four large pieces of parchment paper (about 15x15 inches or 38x38 cm each). Place one fish fillet in the center of each piece.
  • Divide the snow peas, zucchini slices, and lemon slices evenly among the fish fillets.
  • Spoon 2-3 tablespoons of the sauce mixture over each fillet and its accompanying vegetables.
  • Fold the parchment paper over the fish and vegetables, bringing the edges together. Crimp and fold the edges tightly to create a secure, sealed packet.
  • Carefully place the sealed parchment packets onto a baking sheet.
  • Bake for 12-18 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary based on fish thickness.
  • Carefully transfer the packets to individual plates. Advise guests to open the packets carefully at the table, as steam will escape. Serve immediately, perhaps with a side of steamed rice.

Notes

This recipe is incredibly versatile. Feel free to substitute halibut with other white fish like cod, red snapper, or sea bass. You can also vary the vegetables – asparagus, bell peppers, or thinly sliced carrots work wonderfully. For a different flavor profile, try lemon and fresh herbs like dill or parsley, or a touch of white wine.
