Ingredients
  

  • 2 boneless skinless chicken breasts about 6-8 oz each
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 0.5 cup cherry tomatoes halved
  • 0.75 cup crumbled feta cheese
  • 1 tablespoon fresh oregano chopped (or 1 tsp dried)
  • Optional: 0.5 lemon sliced

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil.
  • Pat chicken breasts dry with paper towels. Season generously on both sides with salt, pepper, and paprika.
  • Place the seasoned chicken breasts in the prepared baking dish. Drizzle with olive oil.
  • Scatter the halved cherry tomatoes around the chicken. Sprinkle the crumbled feta cheese evenly over the chicken and tomatoes.
  • Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The feta should be slightly golden and bubbly.
  • Garnish with fresh chopped oregano and lemon slices if desired before serving.

Notes

Serve with rice, quinoa, or a fresh green salad. For extra flavor, marinate the chicken in olive oil and lemon juice for 30 minutes before baking. You can also add Kalamata olives or chopped bell peppers.
